Description
In Umbria, and particularly in Cascia, the cultivation and commerce of saffron was of primary economic importance for centuries, as shown by the fact that the punishments established by the Statute of Cascia, drawn up in the age of the city-states, included very high pecuniary sanctions in the case of theft or damage to the saffron cultivations. It was a precious spice that was at one time used as money and formed part of the dowries that the nuns had to bring with them to enter the Monastery of Cascia. Towards the end of the 16th century saffron mysteriously disappeared and there was no mention of it in Umbria until the year 2000 when the cultivation of this spice was reintroduced into the Valnerina thanks to the collaboration of the Municipality of Cascia, the University of Perugia, Cedrav and a few courageous small manufacturers, today united in the Association of Saffron of Cascia.
